Sweet and Sour Pork

1 green capsicum, 1 small carrot, 5 shallots (small onions)

Pork terderlion cut into bite size cubes.

To make the batter: 1 tablespoon corn flour, 1 cup plain flour, 1/2 teaspoon of baking powder, 1 tablespoon vegetable oil and water. Consistency should be thick and pasty.


Coat the pork with batter.

Deep fry pork till golden brown.

Drain away excess oil.

Fry carrots, shallots, capsicum will soft and remove from pan.

To make sweet and sour sauce: ketchup 4 tablespoons, crushed garlic, 4 tablespoon White vinegar, 1/2 cup brown sugar.

Put the deep fried pork into the wok with the sauce and toss evenly.

Add cooked vegetables into the wok and mix well.

When all the meat and vegetables are evenly coated with the sauce you are done.
