Stuffed Cucumber Soup

1 large cucumber, remove both ends. Cut into 3 pieces and remove the core.

Add to Minced Pork for seasoning, light soya sauce, dash of pepper and sesame oil and mix well.

Stuff the cores of the cucumbers with minced meat.

Shitake mushrooms.

Red dates, wolfberries and dried scallops in a small pot and bring to boil. Add Mushrooms.

Add 1 tablespoon Chicken stock concentrate and put stuffed cucumbers into the soup. Leave the cucumbers in the in the soup long enough for all the meat to cook through and the cucumber has turned translucent.
