Lean Meat Stock

Ingredients: Lotus root, carrots, dried scallops (5 pieces), red dates (handful), wolfberries (handful), lotus seeds (handful), garlic.
Slice lotus root into disc, cut carrots into 1 inch pieces, pre-soak dried scallops in hot water for 10 mintues. Use the whole clove of garlic with skin intact.


Lean meat. Cut into big chunks. You can subsitute with chicken or pork ribs.


Add all the ingredients into large pot of boiling water.


Boil for 2 to 3 hours. Alternatively use a slow cooker and cook overnight.


The finished product! Add salt for taste.


Use a strainer and pour stock into little microwaverable containers.


Wait for it to cool down and freeze. Makes 6 feeds. Great for making porridge or kway teow soup.

Mummy's verdict: Worth the effort. Preparation 10 mins. Cooking time 3 hours.
