Fishball Noodle Soup

Boil fishballs in water until they float. That means it cooked.

Remove the roots of the Bean Sprouts and rinse in water.

Chop fishball into tiny pieces. Important! Children tend to choke on fishballs. Never give fishballs that are not cut. I usually cut them into pea size.

Corn Flour.
Chicken stock concentrate.

Pour 1 table spoon of chicken stock concentrate and mix with warm water. Add 1 teaspoon of corn flour and stir well. This is for taste and to make the soup a thicker consistency. So that it is easier to feed.Noodle soup can be a nightmare to eat if your are 2 years old.

I am using Jade noodles. You can use any noodles you want. But Jade noodles are rice based and really soft.

Cook noodles in pot of boiling water.

Chinese greens, you can use caixin or kailan but Iam using spinach.

Heat wok, add oil and garlic. Add a little sugar to help the garlic caramelise.

Add bean sprouts and fry till they start to turn translucent.

Add chopped fishballs. Since they are already pre-cooked you do not need to fry for too long.

Add greens that is coarsely chopped and toss evenly.

Add enough water to make a soup and when it starts to boil add the corn flour and chicken stock mixture and stir. You should get a runny consistency not pasty.

Put cooked and drained noodles into serving bowl.

Pour soup over noodles. Done!
