Fish Porridge

Boil frozen stock in a pot.

Slice ginger into thin strips.

1/2 a leek, slice finely diagonally.

Throw ginger and leek into stock with 1/2 cup of rice.

Cook at low heat till rice is 90% cooked.

Add sliced fish fillet and simmer till fish is cooked.

Add green leafy vegetables, stir and serve.

Fish porridge. Once the fish is cooked you can use the back of a spoon to break it up.


Letitia's verdict: 9/10 (she was licking the bowl)
Mummy's verdict: Must add the ginger and leek this is to counter balance the taste and smell of the fish unless your fish is really really fresh. Time taken 25 mins.

Spinach and Ikan Bilis

Chinese Combo Dinner. The next 2 recipes are for this meal. Spinach and Ikan Bilis and Pumpkin stew.

A small handful of dried ikan bilis. Soak in hot water for 10 mins.

Spinach. Chop and wash.

Oil and garlic, fry till golden brown.

Add drained ikan bilis and fry till oil is infused with ikan bilis.

Add spinach and fry till 80% cooked.

Add water and shimmer till soft, shouldn't take more than a couple of mintues. I usually don't feed her the ikan bilis as it is hard and has a bitter after taste.


Letitia's verdict: 7/10 ( she was so crazy about the pumpkin she kind of didn't want to eat the spinach.)
Mummy's verdict: Easy to make. Time taken 5 mins.

Pumpkin Stew (chinese style)

Small handful of dried shrimps. Soak in hot water for about 10 mins.


Pumpkin amount depends on how much you want to make.


Cut into bites size cubes.

Oil and garlic fry till brown.

Drain the shrimps and fry with garlic till you can smell the shrimpy fragrance.

Add pumpkin and stir fry till all the pumpkin is coated with oil.

It should look like this.

Add water and shimmer for about 20 mins or till soft.

You can add minced meat into the stew if you want. I added it later because I forgot! Should be fried with the garlic and shrimps.


Letitis's verdict: 10/10 (she loved it! she was begging for more)
Mummy's verdict: I love it too! I ate her left overs.

Salmon steak and Mashed potatoes

Cut potatoes into disc and boil in water.

slice carrots into chip size.
Boil carrots till soft.
Drain potatoes.
In a bowl mash potatoes with butter and milk till smooth.

It should look something like this.

Salmon steak's have bones. Not many and they are rather long. You can feel them with your fingers, remove all bones.

Pan fry salmon with olive oil and butter.

Flip over after a couple of minutes. It needs to be cooked at very low heat so that it is thoroughly cooked.

Serve salmon with mashed potatoes and carrot sticks.


Letitia's verdict: 9/10 (Yum yum yum)
Mummy's verdict: A little expensive for 1 meal, but really easy to make.

Fried Udon

Fresh Udon.

Boil in hot water for about 3 minutes and drain.

Mince lean pork meat or chicken thigh meat.

Finely chop carrots, cabbage and Oyster Mushroom.

For taste and colour I am using dark soya sauce. The non salty type, the consistency is thicker than normal dark soya sauce.

Chinese cooking 101 : Always start with oil in wok followed by the aromatics (garlic, ginger, onions). Sugar and salt (optional) I didn't add any. When the oil is infused with the aromatics add the meat.

Fry till meat is coked and separated.

Add vegetables and fry till 90% cooked.

Add Udon as the udon is already cooked just stir and mix well.

Add dark soya sauce about 1 tablespoon.

Done!


Letitia's Verdict: 8/10 ( she couldn't wait)
Mummy's verdict: Easy to make and really tasty. 20 minutes.

Baby Fish Hor Fun

Slice Treadfin steak into small slices. You can use any fish fillet that doesn't have bones.

This is for the sauce. Chicken stock, few drops fish sauce, few drops light soya sauce, 1 tablespoon corn flour, 1/2 teaspoon sugar

You can use any green vegetables. I have spinach and green capsicum so that's what I am using.


Poach the Kway Teow (flat rice noodles) in a boiling water for a couple of minutes and drain.

In a sauce pan add oil and fry lightly chopped garlic and ginger.

Add the greens and fry till 90% cooked.

Add sliced fish and fry till 90% cooked.

Add water into the pan and bring to boil. Add corn flour mixture stir and turn off fire. You should get a sticky gravy.

Pour gravy over kway teow. There you go baby fish hor fun.




Letitia's verdict: 6.5/10 (she will eat it if you feed her, ate most of it)
Mummy's verdict: Time taken 15 minutes. Good alternative to rice.
