Braised Beancurd and French beans

You will need 1 small Bean curd and french beans (I used half a pack). Finely slice the french beans diagonally and the bean curd into about 1 cm cubes.

Deep fry the bean curd in oil until golden brown. Remove from wok and drain excess oil.

Add garlic to wok and fry till brown.

Add french beans and fry till 90% cooked. It should be translucent.

Add 1 teaspoon dark soy sauce, 1 teaspoon mushroom sauce, 1/2 teaspoon sugar, 2 teaspoon corn flour and water. Mix well.

Add water into the wok with french beans and pour sauce into wok.

When the sauce thickens add the fried bean curd and stir thoroughly.

Let everything simmer for a couple of minutes or until the bean curd has absorbed the sauce.

Ta Da! Scrumptious!


After a 2 week break from eating normal food Letitia is back with a vengeance. Sorry for not updating more often. I have been cooking the same thing everyday because will only eat pasta for the last 2 weeks.


Letitia's verdict: 10/10 (YUM!)
Mummy's verdict: It's good that she is finally back to normal. Easy to make but the kitchen gets really oily. But its really yummy.

Letitia's Fried Rice

Carrot shredded, french beans finely chopped and abalone mushroom. But you can use any vegetables you want.

Mince beef or another other meat.

Oil, Salt (depends on how salty you want it to be and how much fried rice you making) and garlic in the wok.

Add minced meat after garlic is brown.

Fry till meat is cooked.

Add vegetables and fry till vegetables are cooked.

Add cooked rice that is cooled. Or your Fried rice will be sticky and lumpy.

Stir thoroughly.

Done.


Letitia's verdict: 9/10
Mummy's verdict: She has not been eating so I am kind of desperate. She ate 90% of it. So that is enough to make me happy. ;-P

Baby Beef Stew

2 small potatoes diced.

1 carrot diced.

1/4 small Cabbage chopped.

1/2 a small broccoli chopped.

Mince beef.

Add stock to the pot, throw all the ingredients into the boiling stock. Except the broccoli. Boil till soft. Should take about 30 mins at low heat.

When everything is soft and mushy, throw in broccoli and simmer for another 5 to 10 minutes.

Done! Should not require much chewing to eat.....I served it with corn bread.


Letitia's verdict: 8.5/10 (she has been sick for the last 4 days will not eat anything but she ate this all of it.)
Mummy's verdict: Finally something that she will eat. She has been living on chicken wings, sausages and waffles for the last 4 days!!!!

Vegetable & Meat stock

Carrots, Corn, Leeks and Mushrooms.

Pork. Throw everything into large pot and boil for 3 hours.

Cool and pour into containers.

Freeze! Makes 6 feeds.
